I know that its been a while since you posted this question, and you may well have found the answer you were looking for... but I've only just seen it.
There are a few large global channels on Defiant. There is the 'Need Team' Channel, whos use is pretty self explanatory. The 'Forumite' Channel which is pretty good for any questions you may have/general banter. 'Defiant Badgers' for all your badge hunting needs and there are a good few more out there as well.

Is there a place to look up all available channels for a server that someone might want to join? Liberty is my home and I was wondering what there was on there besides the giant monster channel.

I just answered my own question!!! Here is something I found on the COH site.
There is a new window that allows the searching of Global Chat channels. To access this window, right click the chat window and select \"Channel Search\". You can search for channels with a certain name, the most active channels, or all channels you are a member of. From this window you can also set the channel description and MOTD.

If you bring up the window and press the DEFAULT button I think it brings up all the channels available on the server you're currently on...but don't quote me on that one.
