a nice dip in hot weather, all food is straight from the fridge.
in a flat dish about a 1" deep,
spread out a can of refired beans,
then a jar of hot salsa,
then a small tub of sour cream and scatter a grated cheese. Eat with plain corn chips!
It's a fast meal or for when people drop in.

ok here is my famous burger.
you will need atlest a 2 pound thing of ground beef.
this is opional grill onion chop it up and then make 2 thin patties. next put the chopped onion and shreaded cheese on the patty. Next take the other patty and put on top of the onion, cheese and other patty. It should look like a hot pocket :). Grill and enjoy a friggin great burger. the cheese should be melted into the patty and you will be the taste of the onion in the beef as well.
oh and i got many more recipes 2 come :)

Ok, Grif can add something he loves to eat....
This may be well known but if not.
Pizza Casserole
Ingredients:
1 to 1.5lbs of Ground Chuck (ground been heavier grease content)
1 jar of Pizza Sauce (I use 2 but thats me)
Packet of Pepperoni
Packet of Mozzarella Cheese
Roll of Biscuits
Extra Ingredients:
1lb of Spicy or Italian Sausage (in addition or replacement for Ground Chuck)
Sliced Ham
Bacon Pieces
Varying kinds of Pizza related Cheese
*Preheat oven to 425. I super speed cook and preheat as high as my oven goes but thats me again.
*Brown Ground Chuck (or whatever meat/sausge you use)
*Grease bottom of a 13 x 9 glass casserole pan and line it with the Roll of Biscuits.
*Next layer should be browned meat or sausage
*Followed by a layer of Pepperoni
*Dish out Pizza Sauce on top of all that.
*One more layer of Pepperoni, also this is where you would add any of the extras you may of added...bacon, sliced ham
*Last topping of Cheese
Sometimes as a final touch I will place a few misc Pepperoni on the top of cheese. Also I might throw on a dash of Italian seasoning (if I have some).
Bake this at 450 for about 30 minutes or until top is golden brown. Word of caution if not baked thoroughly the biscuits will not cook all the way and you will be sad puppy.

One more,
My Heart attack dish.
Poach eggs in a pan with about 1/4 a inch of milk.
Once they are done keep warm on toast on your plate,
add a hand full good grated cheese and turn up the heat and stir while reducing the milk and cheese to a sauce.
Pour over eggs while using a fork to keep back any big lumps.
Salt and pepper to taste and enjoy!

ok Rainah i told you i would post my turkey and here it is.
first rub down turkey with a sage and butter mix. next you will layer bacon on top of the turkey breast. In 30 mins apply a mapple surup glaze on the turkey. After you put it back in the oven you will need to go back every 30 min to reapply the mapple surup hot water glaze. you will only need enough hot water to break up the surup to make it more spreadable. thats pretty much it. the beacon's fat will keep the turkey really moist and its dynomite.

So I started working on this the day we were talking about it on the Global Chat Channel.
I'm going to expand on it and see if I can't get a bigger userbase for it.

It's only forums at the moment, but I might expand on it in the future if it takes hold. :)

Early gaming favorite of mine
Chuck's "Breakfast Pan"
3 red potatoes
3 eggs
3 sausage links or patties
1 small diced tomato
various spices of your liking
Chop up potatoes and fry up in a pan using olive oil.
Throw sausage into the mix careful not to burn, they will cook quicker than the taters.
Mix eggs with a bit of milk.
When potatoes and sausage are done, lower heat and drain some of the oil if there is still some left. Pour in eggs and diced tomato. The eggs should fill all the voids in the pan. Add spices to your specific tastes, I like to use Chipotle, garlic, and some times a little Old Bay.
When egg mixture firms up your done. If your using teflon you should be able to slide the whole thing onto a plate. Cut into sections and serve.
I also like to top mine off with some fresh Pico.
Tank'ns my Bidness and Bidness is GOOD!

Thundar’s Killer Queso
1 16oz Stick Velveeta
1 10oz can of Ro*Tel diced tomatoes*
1 8oz can of diced green chilies
1lb ground beef –or- chili meat –or- finely diced beef**
1 packet of HOT taco seasoning
1. Brown and drain beef of choice.
2. Mix HOT taco seasoning and 1 cup of water to ground beef and let simmer on low, uncovered.
3. Cut Velveeta into approximately 1” cubes for easier melting.
4. Open Ro*Tel and diced green chilies. Drain approximately 50% of the fluid from the cans.***
5. Mix Velveeta, Ro*Tel and green chilies into a pot and simmer on medium heat until all of the ingredients have melted. Stir regularly to prevent scorching.
6. Once most of the liquid has evaporated from the simmering beef, add it to the Velveeta and canned vegetables mixture.
7. Continue to heat on medium until all of the cheese is melted. Then turn to low heat or pour mixture into a croc pot for serving.
*Note: Ro*Tel is a brand name product that is simply diced tomatoes with varying additional vegetables like onions and green chilies. Most super market chains offer something similar nowadays. But in my many experiments with this Queso, I still find that it turns out best when I use that brand.
**Note: I always preferred chili meat for larger pieces of meat in the Queso, but could not always find it. Last time they had finely diced beef at the market, and I found it to be the best so far. Use what you can find.
***Note: Melting the cheese with the other canned ingredients helps prevent scorching of the cheese on the bottom of the pot. That’s why you do not drain all of the liquid from the canned products.

Salisbury Steak Ala Falc
These make awesome lunches the next day or even better leftovers the next night as the flavors really get mingling as they sit, and will feed a family of 4 a really healthy dinner (compared to frozen processed microwave patties of uncertain origin), and cook in just about as much time as convenience food.
Steaks:
1.5 pounds Ground Meat (I recommend Chuck)
1 Egg, beaten
1/4 Cup Plain Bread Crumbs (Panko if you can get them)
1/4 Cup Milk
2 Tablespoons (approx) Beefy Onion soup mix (Liptons)
Gravy:
1/2 Cup hot water
1/4 cup red wine
1/4 cup Lea & Perrins Worchestershire sauce
remaining Soup mix from above
2 tablespoons flour
1 can Mushroom stems and pieces, drained or 1/4 cup fresh sliced mushrooms
Mix ingredients for steaks and form into 4 to 5 patties, set aside. In a large measuring cup combine hot water, red wine, worchestershire sauce and soup mix, set aside to let flavors mingle while meat cooks.
In a medium to large skillet heat 1 tablespoon canola oil over medium heat till it shimmers. Place patties evenly in the pan. Cook until done (about 7 minutes a side), turning once only. If the heat is too high and you think your patties will burn, reduce heat slightly. You want a nice brown crust on these patties and a good fondant left in the pan (those little brown crispy bits stuck to the bottom of the pan, awesome flavor boost for the gravy), without burning them. Remove from pan and set aside to rest. Add 1 tablespoon oil and 2 tablespoons of flour to remaining oil in skillet, whisk together and add water/wine/Worcestershire/soup mix slowly to skillet, whisking the entire time. Add mushrooms, when mixture begins to bubble slightly, place patties back in sauce and spoon sauce over patties to cover. Lid the skillet and turn heat to low for 5 minutes and allow patties to reheat and the gravy to thicken slightly.
Remove from heat, let rest 3 minutes, serve with a generous dollop of pan gravy on top. Best sides for this dish are Potatoes Au-Gratin (home made if you have time and inclination, or boxed using the oven method to cook) and steamed broccoli with a lemon-butter sauce.
More recipes to follow, including real Texas-Style BBQ brisket and BBQ Sauce from scratch.
